The Philosophy
Grown on the Land.
Distilled by Hand.
Stauning is a small distillery in West Jutland, built on the belief that whisky should taste of the place it comes from. Rye and barley grown by neighbouring farms are floor-malted on site, distilled slowly in small copper pot stills and left to mature in the sea air of the Danish coast.
Stauning is Danish whisky in the truest sense: an expression of West Jutland’s soil, weather and patience.
Founded in 2005 by a group of friends with no whisky-making background, Stauning began as an experiment in doing things the difficult way. Rather than buy malt, they malted their own grain on the floor. Rather than run a single large still, they built a row of small direct-fired pot stills and ran them by hand.
That stubbornness shaped the house character. Stauning whiskies are grain-forward, generous and unpolished in the best sense, with the spice of rye, the weight of barley and a clean, coastal freshness running underneath.
The core range moves from the signature Rye to the double malt Kaos, the peated Smoke and the harvest release HØST, while a small number of single casks are finished in wine and fortified casks such as Rivesaltes and Madeira, each bottled one cask at a time.

Rye + Barley
Grain, fire, sea air.
Local Grain
Rye and barley are grown by farms around the distillery in West Jutland, keeping the whisky tied to a very small patch of Danish soil.
Floor Maltings & Direct Fire
The grain is floor-malted on site and distilled in small, direct-fired copper pot stills, a slow, hands-on method that rewards patience.
Coastal Maturation
Casks rest in a coastal climate where cool air and steady humidity shape the whisky gently, while selected single casks are finished in Rivesaltes and Madeira wood.
